- 1 TJ’s English Cucumber, peeled
- 4 ounces TJ’s Wild Smoked Salmon, cut into small rectangular pieces
- 4 ounces TJ’s Whipped Cream Cheese or TJ’s Non Dairy Spread
- 1/2 TJ’s Lemon (juice)
- 1/8 teaspoon TJ’s Spices of the World Dill
Cut peeled cucumber into thirds. Slice each third lengthwise to create long, thin cucumber slices. Pat dry. Combine cream cheese, lemon juice and dill in a bowl and mix thoroughly. Spread cream cheese mixture over cucumber slices. Place a piece of salmon on a cucumber slice and top with another cucumber slice to create a sandwich. Serve chilled.
