Now I know you have to wait for the pumpkin butter to circulate back into stores, but I like to prep people. So, save this recipe for a later date (we’re only a month or so away)!
↘↘↘ ↡↡ I present to thee PUMPKIN NANNER-NUT MUFFINS ↡↡↙↙↙
- 3 cups TJ’s Almond Meal
- 1 teaspoon TJ’s Baking Soda
- 3 TJ’s Large Eggs
- 1/2 cup TJ’s Pumpkin Butter (seasonal)
- 2 very ripe TJ’s Bananas
- TJ’s Canola Oil Spray
Preheat oven to 350 degrees. In a mixing bowl, combine almond meal and baking soda. Whisk eggs in a separate mixing bowl. Add pumpkin butter to eggs and stir until thoroughly combined. Add pumpkin egg mixture to almond meal and mix to create batter. Mash bananas and fold into the batter. Spray a muffin pan with canola oil spray. Evenly distribute batter amongst the 12 muffin cups. Bake for 35 minutes.
