Preheat oven to 350 degrees.
In a small bowl, combine clarified butter and honey and set aside.
Grease bottom and sides of an 8×8 pan. Beat eggs, oil, and milk in a large mixing bowl. Add in cornbread mix and stir until moistened—do not over mix. Fold in diced jalapeños and chopped bacon. Pour into pan. Bake on the center rack of oven 35-38 minutes or until golden brown and toothpick inserted into center comes out clean. Serve warm, with honey butter.
This is a classic Trader Joe’s product that’s been earning its place on the shelves for close to 20 years. Trader Joe’s Cornbread Mix is easy-to-make (you just add egg, oil, and milk) and bakes up to a cake-y, crumbly texture. Its sweet flavor profile is amplified by the addition of actual corn kernels in the mix – the corn adds a bit of chew to the texture, too. With a spread of whipped butter or a drizzle of the Honey Butter in the recipe, you’ll be in cornbread heaven in no time (okay, some time – about 30 minutes). Each 15 ounce box is only $2.69.
HOT & SWEET JALAPEÑOS
Trader Joe’s Hot & Sweet Jalapeños have been pickled in a brine of vinegar, sugar, organic jalapeño purée, and spices like red chili pepper and garlic. They’re crunchy like pickles, spicy like chili peppers, and sweet like candy. Excellent on an appetizer platter, they’re also delicious on burgers or with barbecued pork or chicken. Bake them onto a pizza, blend them into homemade salsas, or add them to this deliciously kicked-up Cornbread for sweet, peppery bliss. Selling each 12 ounce jar of Hot & Sweet Jalapeños for $2.49.
CLARIFIED BUTTER (GHEE)
Also known as “ghee,” clarified butter is made by slowly melting butter, allowing the water to evaporate and separating the milk solids from the rich, golden liquid that rises to the top. What remains is pure butterfat, and is excellent for cooking. Being able to pick up a jar of Trader Joe’s Clarified Butter from the grocery shelves means you can enjoy it in your cooking without having to actually clarify the butter yourself – a considerable time savings. Their selling each eight ounce jar for $3.99, a value that needs no further clarification.
UNCURED APPLEWOOD SMOKED BACON
Rather than use chemical curing agents, they’ve Smoked this Uncured Bacon over real Applewood, giving it a distinctive, delicious, downright decadent flavor. This is thickly sliced bacon that’s appropriate with eggs for breakfast, with lettuce and tomatoes for a BLT, in wraps, on salads…or folded into cornbread! Each 12-ounce package is $5.29, everyday.
